Golden Queen Peach Jam & Chilli Glazed Prawns

Why it works..... the jam's rich golden sweetness balances the heat of the chilli and the brininess of the prawns, creating a sticky, glossy glaze that clings to the seafood like a dream.

Ingredients:

  • 500g raw prawns, peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp olive oil
  • 2 garlic cloves, finely chopped
  • 1 small red chilli, finely sliced (or a pinch of chilli flakes)
  • 3 tbsp Jamworks Golden Queen Peach Jam
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • Fresh coriander and lime wedges to serve

 Instructions:

  1. Sear the prawns: Heat olive oil in a pan over medium-high heat. Add prawns and cook for 1–2 minutes per side until just pink. Remove and set aside.
  2. Make the glaze: In the same pan, reduce heat to medium. Add garlic and chilli, sauté for 30 seconds. Stir in the peach jam, soy sauce, and lime juice. Let it bubble for 1–2 minutes until syrupy.
  3. Glaze the prawns: Return prawns to the pan and toss to coat in the sticky glaze. Cook for another minute until everything is glossy and caramelised
  4. Serve: Garnish with fresh coriander and a squeeze of lime. Serve over jasmine rice, rice noodles, or even on skewers as a canapé.
